I'm looking for a recommendation for a Linux-friendly board with one
ethernet RJ45 and two available PCI slots.

You can get a mini-itx board (smaller than micro-atx) with one slot and
a riser which expandes to two slots.

Lots ... Most Micro-ATX boards have 3 or more PCI slots, many have on-board
LAN connectors.

Examples:

All of them have 3x PCI, on-board Ethernet and are inexpensive (and that's
just one
manufacturer).
