You don't say which version of Illustrator that you are using, but I'll
offer a couple of ideas.

* The font that was in the PDF that you used are probably not on your
system. Without a complete installed font, Illustrator may not be able to
edit the font. This is part of some fonts' copy-protection scheme.

* If the font *is* installed on your system, you should be able to use the
"Find Font" functions to swap in the correct font and go on from there.
