I've not been able to find any way to get underlined type or underlined
text in Illustrator (just underline selected words or letters in a
Helvetica type string) . . . ???

There is no way to underline text in Illustrator unless you have a real
underlined font installed.

The same applies to phony italics (oblique) or bold type treatments that are
available in PageMaker, Quark, Word, etc. In Illustrator, if you don't have a
real italic or bold (or underlined) font installed you won't have access to
those styles.

Getting back to your original question... The only work-around is to use the
pen tool with an appropriate line weight, and draw the underline yourself.
